Jennifer Levine's Nightly Leftover Dinner:

3 cloves crushed garlic
1 cup shredded cabbage

1/2 cup corn, frozen or preferably cut off the cob, already cooked
1-2 diced carrots1/2 cup leftover cooked brown rice, bulgar, quinoa or barley
olive oil for cooking
4 or so oz. protein, leftover chicken, sliced or thawed, frozen salmon -or both!
salt and pepperhot sauce
In a medium sized skillet, heat up a tsp or two of olive oil. When hot, add minced garlic and stir for a minute or two but don't let it burn. Add the carrots and stir for a couple of minutes. Add the cabbage and corn and then the leftover protein-chicken or fish. Stir for a few minutes until hot.
If fish is uncooked, cook up separately in a bit of olive oil in a skillet. Cook for a few minutes on one side, flip and cook a few more minutes on the other side until opaque in the center.
Add fish to the cabbage mixture, add salt and pepper to taste and a little hot sauce of your choice. Enjoy!
