Susan Horowitz' "Step Up To The Plate" Hummus:
1 15 oz. can chick peas
1 clove garlic
1 TBS olive oil
1 to 2 TBS tahini
Juice of one lemon
Optional one to two roasted red peppers. Salt and pepper to taste. Puree in food processor until creamy. Add salt and pepper to taste.
Alma's Edamame Dip:
1 1 lb bag frozen, shelled, organic edamame (Whole Foods)
1/2 cup olive or canola oil
1/4 cup rice vinegar (sold at most stores)
1 TBS sugar
1 tsp salt
Boil frozen edamame for five minutes. Let cool. Puree all ingredients in a food processor until creamy.

Both of their kids are picky and Zane's said that you must integrate the veggies rather than separate them on the plate. Susan's daughter is more likely to eat it if she makes it with her mom. So it looks like the common thread is that you must be creative to get your picky eaters to eat healthy, especially mixing in the veggies so they are hidden.

This will be my lunch tomorrow! I will share it with my 20 month old who needs to eat more veggies. I've started hiding spinach in spaghetti. Not my preferred method, but he spits everything else out. Sad. He will eat a hummus roll-up, though. I can hide something in there. Thanks for the great tips!!

It's inspiring to meet another mom who burrito-wraps her dinner to make it more enticing for the kids to make and eat. We put just about everything in a tortilla -- it's a great way to get rid of leftovers and make an appetizing dinner on a busy night! I saw these GIANT jars of hearts of palm @ costco today -- now I know that I should have picked them up. Thanks, Alma, for delivering another fast and fun dinner idea. Looking forward to the next kitchen diva and gadget (altho nothing beats the stylin' onion goggles!)

I love your edamame dip recipe, Alma, and always serve it at parties. I start with 1/8 cup of vinegar and add more from there because I like it less tangy. Always a hit! Looking forward to trying Susan's very simple hummus recipe, that is shockingly easier than the one I make.
