Celebrate Cinco de Mayo with Sneak Peek of Villalobos

Villalobos—slated to open in June—will take over Pig & Prince on May 5.

Come hungry to this pop-up Cinco de Mayo party with Chef/Owner Adam Rose of the soon-to-open Villalobos on Monday, May 5, from 4 to 11p.m.

The chef will give diners a taste of the upcoming restaurant's menu at Pig & Prince Restaurant and Gastro-Lounge at 1 Lackawanna Plaza in Montclair.

The menu will include: 

  • Pig Roast 
  • Tacos: carnitas - lengua (tongue) - fish - nopales (cactus)
  • Roasted spring onions
  • Elote (street corn on a stick with crema and chili)
  • Guacamole (Villalobos-style!)
  • Tlacoyos with queso oaxaca and mole (masa empanadas)
  • Ceviche blanco
  • Chicharrones
  • Churros with Mexican chocolate sauce

The new venture of longtime Nutley residents (and childhood friends) Adam Rose and VJ Moscaritola (owner, Gumdrop Hairdressing in downtown Montclair). Menus will feature traditional Mexican ingredients & recipes influenced by Adam's experience and personal cooking style. In his words, "dishes pulled from the heart of Mexico, especially from Oaxaca and Puebla - the birthplaces of corn, masa and tamales." Though BYO, guests may order from an exciting drink menu offering agua frescas, micheladas, Mexican sodas and slushies.

Until very recently, Adam Rose was Executive Chef at NICO Kitchen & Bar at NJPAC. Prior to, he was instrumental in the launch and day-to-day operation of Restaurant Passioné in Montclair and Bin 14 Trattoria & Wine Bar in Hoboken.

The 1,800 square-foot Villalobos space—scheduled to open in June at 6 South Fullerton Ave.—will feature an open kitchen, bar seating and dining area. Interior design utilizes a restorative approach, incorporating raw materials such as reclaimed wood.
