Welcome Spring! The Art of Seed Starting

Jim Matarazzo of North Caldwell gives us expert advice on seed starting indoors

Crocuses are blooming, as are forsythia plants, magnolias and all sorts of flowers and bushes. Yes, spring is officially here today although, with the warm weather, most blossoms are about two weeks ahead of schedule. So what does this mean to the food geek? Among other things, it signals the time for seed starting. I try to curb my enthusiasm, and refrain from buying every pouch of seeds at the supermarket, as there is a certain art to seed starting. I consulted with our resident farmer and produce expert, Jim Matarazzo of Matarazzo Farms in North Caldwell. According to Matarazzo, seed starting is a "tricky proposition." As a result, he recommends supplemental lighting, in addition to commercial growing kits that act as mini-greenhouses. …

Everyone Can be Italian on Saint Joseph's Day

Just days after marking St. Patrick's Day with Irish soda bread, the hungry turn to St. Joseph's zeppole.

  If everyone is Irish on Saint Patrick's Day, it's just as easy to claim Italian heritage two days later on Saint Joseph's Day. The holiday is marked with traditional foods, especially the famous Zeppole di San Giuseppe. Zeppole are basically "Italian doughnuts" simply dusted with sugar. Pignolatta, also known as Struffoli, are small fried pastry balls covered in honey, nuts and chocolate, also traditional on the holiday.  The origins of the day are thought to date back to Medieval Sicily when the saint was said to have answered people's prayers by ending a drought. Easy Recipe: Irish Soda Bread for St. Patrick's Day

In this easy recipe there's no kneading, no rising, no yeast and hardly any work!

  Even though it is called "Irish Soda Bread," this isn't a traditional bread recipe that involves yeast, multiple risings and lots of kneading. It's a pretty easy recipe. Sometimes it can be a tad bland, so you need to add some punch. I saw Ina Garten from the Barefoot Contessa add orange zest to her recipe on her show. That really makes a difference. She doesn't add caraway seeds to hers, but I do as I like their unique flavor. You can use currants or raisins in this recipe. I like to bake my Irish Soda Bread in a 9" x 9" brownie pan. It can be baked in a round pie plate as well so it can be cut in its traditional pie wedges. Either way, this is delicious warm out of the oven or toasted the next day.
